Celebrate National Cheeseburger Day in a SWEET Way!

Secret family recipe for β€œburger” cookies brought to you by Nani’s Corner

September 18th is National Cheeseburger Day! You could fire up the grill or headout to your favorite local pub, but we’ve got a “burger” recipe that’s too sweet not to share! This is our family recipe for the highly-popular and often-requested “burger” cookies. Fun to make and of course, fun to eat with people from ages 2 to 92! Add whatever spin you wish, after all half the fun is in creating them. 


MINI BURGER COOKIES

INGREDIENTS 

Green food coloring

Yellow food coloring

½ cup shredded coconut

48 ‘Nilla wafers

24 small York Peppermint Patties

1/3 cup honey

1 Tablespoon sesame seeds

Extras:

Candy watermelon slices

Can of potato sticks (to look like French fries)

MATERIALS 

Thin clean paint brush for spreading honey

2 small plastic sandwich bags

24 cupcake papers–large are best

DIRECTIONS

1. Base lay out 24 cookie wafers on a wide pan. Paint each with a thin coat of honey

2. Place a peppermint patty on each cookie base.

3. Place 1/4 cup coconut in a plastic bag. Add a few drops of green liquid food color. Shake well until the coconut is the color of lettuce.

4. Place remaining coconut in a second bag with a few drops of yellow liquid food coloring. Shake until you have the color of mustard or melted cheese.

5. Paint a coat of honey on top of the chocolate patty and add “lettuce” coconut and “cheese” coconut to be visible around the edges of the mini-burger.

6. Paint the bottom of the remaining wafers with a thin coat of honey and press it on the top of the coconut lettuce.

7. Now you have a burger, but there’s one more step. Use remaining honey to paint a thin layer about the size of a nickel on the top of the uppermost cookie. Carefully scatter a few sesame seeds on that honey.

8. Let the “burgers” dry so they will hold together when picked up. It is best to serve them in individual cupcake papers with candy watermelon slices and potato sticks on the side.

*These do not need refrigeration.

Note: There are many pictures and various directions for making these when you do an Internet search. Nani’s recipe is easy and fun to make with no baking. Use your creativity to cut tomato rounds or pickles from sheet candy. Serve with a big smile. πŸ˜„
